TWEETIE OMELETS WITH SALMON AND CAPERS

1 Tb. unsalted butter
2 eggs
2 egg whites
1 tsp. capers
4 oz. smoked salmon or lox
1 tsp. chives, diced
DIRECTIONS:
1. Heat a 6-inch nonstick skillet on
medium heat, and add 1 tablespoon
unsalted butter to melt.2. Lightly beat 2 medium eggs and 2
egg whites together; then pour into the
pan.
3. Let set for 15 seconds or until
edges start to cook. Take a rubber spatula and lightly draw outer edge of egg to the
middle, allowing more uncooked egg to come in contact with the heated surface. Do this a few more times; then add capers and
pieces of smoked salmon or lox to the far
side of the pan away from you and allow mixture to cook to desired
firmness.
4. To serve, grab the
handle sideways and slide filled portion of omelet
onto a plate, tipping the pan to fold unfilled side of omelet over salmon filling. Top with chives. Cut in half and serve.
