TOMATO THYME WHOLE WHEAT COUSCOUS

4 1/2 cups tomato juice
1 sprig fresh thyme
1 clove
1 cup whole wheat couscous
DIRECTIONS:
Bring the tomato juice, thyme and garlic to a boil in a saucepan, then reduce to a simmer until the liquid is half gone.
Pace the couscous in a bowl and pour the reduced tomato juice over the couscous and mix well. Cover and let sit until all the liquid has been absorbed, about 10 minutes. Serve tepid, not hot.
