LEMON CHICKEN KABOBS

1 pound chicken breast, cut into chunks
1/3 cup peanut oil
1 teaspoon lemon
juice
1 teaspoon red wine
vinegar
2 tablespoons seasoning mix (composed of equal amounts whole marjoram, thyme, oregano, basil leaves,
ground pepper)
sea salt
1 clove garlic,
minced
lemon wedges
DIRECTIONS:
In a blender container place oil, lemon juice, vinegar, spice mixture and garlic. Blend on high
for 30 seconds.
Place chicken chunks in a large plastic bag and pour
marinade over chicken and marinate in the refrigerator
overnight. Remove chicken from mari�nade and drain well.
Thread on skewers,
alternating 3 chunks of chicken and 2 lemon
wedges per skewer. Grill about 4 minutes per side. Serve immediately or
chill in refrigerator and serve cold
