FETA AND TOMATO SPREAD

4 ounces feta (French is less salty than Greek)
2
plum tomatoes
1 tablespoon
extra-virgin olive oil
2 teaspoons finely chopped fresh oregano leaves or 1 teaspoon dried
oregano, crumbled
freshly ground black
pepper
whole wheat pita, small,
cut into 4 pieces and toasted
DIRECTIONS:
Preheat
broiler.
Crumble
feta and spread evenly in a shallow flameproof baking dish (roughly 1-inch
deep).
Thinly slice tomatoes crosswise and arrange, overlapping if necessary, on feta. Drizzle oil (or spray oil from a mister) over tomatoes and sprinkle with
oregano and pepper. Broil mixture 2
to 3 inches from heat until cheese is bubbling, 5 to 8 minutes.
Serve spread with pita toasts.
